Harvest and Use
- Harvest in August - September. Berries become very dark and soft to the touch when ripe. Clip stems of berry clusters and remove berries.
- Elderberry flowers can be used to make tea, and the berries can be boiled into a syrup that is very high in protective antioxidants.
- Berries are very tart when raw, but can be baked into pies, cakes, or breads or made into jams and jellies.
- Please note that berries can cause stomach upset if eaten raw in large volumes.
